Dots and Daisies Cake

It's finished! I wouldn't call it a masterpiece by any stretch of the imagination, but I'm okay with it. I have worked with rolled fondant a little bit in the past. Mostly, I've used it like play-dough to create objects. On Lane's hunting cake, I made the hunter and deer out of fondant and rolled the fondant out to cut the "blobs" that made the camouflage. I also used it on Cohen's construction cake to make the banner that said "Happy Birthday, Cohen."

Today, I decided that I would try to create a "Dots & Daisies" cake. I envisioned it being covered in the rolled fondant. This was a completely new skill for me. I've heard that covering a cake in fondant can be quite difficult although those "Cake Divas" and "Ace of Cakes" folks make it look like no sweat. Being the overachiever that I am, I just couldn't imagine that I couldn't handle it --- for some reason I tend to think I can do a little of everything.

Covering the cake in the fondant wasn't the most difficult thing I've ever done, but I certainly didn't get it perfect by any stretch of the imagination. Of course, had my cake been perfect, I think it would have come out a little smoother. I would imagine that if I'd applied fondant 400 times I'd be a little better at it too! I knew I was going to be layering a lot over the fondant, so I shrugged it off and rocked on. Photo 1 is the cake after being covered with fondant.

Next stop, polka dots. Since my daisy was pink with some yellow accents around the center, I settled on yellow and pink dots. The fondant I purchased was white (you can buy it already colored, but primary colors are all I saw), so I chose to tint my own. I used the excess fondant that I trimmed off of the cake to tint for the yellow dots. I have both regular food coloring and gel icing color. I've heard it said that the gel is supposed to be preferable because it doesn't dilute the icing, but I don't notice much difference when coloring the fondant. In fact, since fondant dries and hardens quite quickly, the regular food coloring seems to give me a little more time to work with it. After I had the desired tint to my fondant, I rolled it out to make my polka dots.

Oh, I failed to mention earlier that I couldn't locate my rolling pin for this adventure. Covering the cake with fondant might have been a bit easier if I had been able to roll it out with a rolling pin rather than with a glass! Laugh, if you must, but as my friend Christina knows, I don't even own a mixer and once made a meringue with only a whisk!! Where there's a will, there's a way!

With the yellow fondant rolled out, I used a variety of round kitchen items to cut my circles (lids, cups, a straw -- stuff like that). I brushed each dot with water on the back side before applying to the white fondant so that they would adhere. Photo 2 is the cake after applying the yellow polka dots.

The only thing left to do was to repeat the whole tinting and dot-making process for the pink polkas. I finished out the cake with a border of yellow icing. Ta-da. There she is. Pictures 3 and 4 are the finished product. Hope she likes it!

We All Have Something in Common

Over the summer, our family has made Arkadelphia the destination for quite a few of our "day trips." We enjoy taking the boys to the Arkadelphia Aquatic Center. It's a great little "get away" that doesn't cost too much. We have also happened upon floating the Caddo River this summer. No matter what our activity may be there is no doubt what our other stop will be.

I am a die-hard Taco Tico fan. No, I'm not kidding. I know there is a lot of food in the world. Trust me, there's a lot of it that I like ---- waaay more than I should, but Taco Tico is among my favorites. Honestly, I thought I was alone in my passion, but it didn't really matter to me. In fact, I believe I forced my husband to take me to Magnolia to eat at Taco Tico when I was HUGE pregnant with Lane. Magnolia's Taco Tico has since closed, but the excitement I feel for Taco Tico is still going strong.

Strangely enough, I found that many of my friends share my love for Taco Tico. I know that Facebook has its critics, but I have found more long lost friends and learned more about my closer ones than I could ever imagine. On one particular Arkadelphia trip, I updated my Facebook status with my phone to reflect that I was about to eat at Taco Tico. The amount of comments on this one little blurb was astounding. If memory serves me correctly, there were 44 comments all having to do with Taco Tico.

Today, we went to Arkadelphia to float the Caddo. We had a great time and, of course, ate at Taco Tico! I knew it was a great blogging opportunity, so I captured a photo of my taco (10 for 7.99, by the way) to share with you all. Long live Taco Tico!!

As you can see, gills evidently run in the family. Lane was just a few months older than Cohen when he learned to swim. In the pool is one of the rare times when Lane does actually want to be photographed.

What'd You Say?

After I've been blogging for a while, if you follow you're sure to make at least 2 observations. #1 -- I love photos and love to share them. #2 -- I'll probably have 3 pictures of Cohen for every 1 picture of Lane. I'm sure there's a name for the phenomenon, but there is some change that occurs in children (at least boys) around 6/7 years of age. They suddenly become too cool to be kissed/to kiss Mom, Grandma or any of those other icky girl-type people and they are also far too cool to be photographed unless they are making a face, holding rabbit ears behind someone else's head or playing some sport.

It is par for the course for me to delete 80% of the photos I take of Lane because he has contorted his face into some shape that makes him unrecognizable as the boy I gave birth to. Imagine my surprise this afternoon when I was outside taking photos of Cohen on the mower and heard from behind me "Hey, Mom take a picture of me!" Huh? What? I turned to find Lane standing, ready to be photographed with one hand propped on the basketball goal. Just when you think you have them figured out....

Photo Session from Friday

On Friday, I did a photo session with my youngest neice, Graci. This is one of my favorite pictures from the session. I made her enormous flower headband and her tutu! You can't imagine how much fun that is for a mom of two rowdy boys! I absolutely love taking photos and Graci was a beautiful, cooperative subject.
